Leek & potato soup
A thrifty, filling soup from two winter staples. Blend it smooth or leave it chunky.
From this month’s basket: Potatoes and leeks
Ingredients
- 1 tbsp oil
- 1 onion, chopped
- 2 large leeks, sliced
- 600g potatoes, cut into chunks
- 1 litre vegetable stock
- black pepper
- 100ml milk or a plant alternative (optional)
Method
- Gently cook the onion and leeks in the oil for 8–10 minutes, without letting them brown.
- Add the potatoes and stock.
- Simmer for around 20 minutes, until the potatoes are soft.
- Blend until smooth, or only partly for a chunkier soup.
- Stir in the milk if using, and season with black pepper.
Clean dark-green leek tops can flavour stock. The soup freezes well in portions.
